It also made him dream of starting a project of his own. No stranger to viticulture Salvatore knew he could start farming vines from his wife Stefania’s family. But before branching out on his own, he felt the need to learn how to properly run a cellar.\u003c\/p\u003e\n\u003cp\u003eMarino had learned how to make wine with his father, but found those bulk products riddled with defects, namely brett. So for many years, Salvatore cut his teeth working at huge wineries in California, Puglia and Sicily to further his knowledge of enology.\u003cbr\u003e\u003c\/p\u003e\n\u003cp\u003eAlthough he owns 5.5 hectares of total land, he only has 1.5 hectares under vine—a way of attempting to maintain biodiversity. Organic farming, with only bush-trained vines on his property, \"in the tradition of his ancestors.\" This Nero d'Avola is a more seaside version than most, with notes of black fruit, iodine, cherry, and kalamata olive, but only medium-weight, with low tannin.\u003cspan\u003e\u003c\/span\u003e\u003c\/p\u003e\n\u003cp\u003e\u003cspan\u003eThis wine is made of 95% Nero d'Avola and 5% Pignatello. It sees a short maceration, fermentation in stainless steel, and is aged in concrete. It is bright and fresh, and is very food friendly. Pair it with Linguine alla Frutti di Mare. \u003c\/span\u003e\u003c\/p\u003e\n\u003cp\u003eProduced in the renowned “Contrada Buonivini”, near Pachino, always known for Nero d’Avola. \"Turi\" is the local way of saying Salvatore in Sicily.\u003c\/p\u003e\n\u003cp\u003eThe inspiration for the labels comes from Futurism, an Italian literary, artistic and musical movement of the beginning of the 20th century.
