Burlotto is arguably the benchmark producer for the variety, treating it seriously while preserving everything that makes Pelaverga so wonderfully distinctive. The estate ferments it in open French-oak vats and stainless steel, then matures it in steel to retain its aromatic freshness.\u003c\/p\u003e\u003cp\u003eThe 2024 is \u003cstrong\u003epale, translucent ruby and intensely perfumed\u003c\/strong\u003e, bursting with \u003cstrong\u003ewild raspberry, strawberry, dried rose and violet\u003c\/strong\u003e, followed by Pelaverga's unmistakable signature of \u003cstrong\u003efreshly cracked white and black pepper\u003c\/strong\u003e, savory herbs and exotic spice. There's even a slightly smoky, almost incense-like quality lurking behind the fruit. Falstaff awarded the vintage \u003cstrong\u003e92 points\u003c\/strong\u003e, particularly noting its raspberry, rose and freshly ground pepper character.\u003c\/p\u003e\u003cp\u003eOn the palate it's \u003cstrong\u003elight-footed, juicy and wonderfully energetic\u003c\/strong\u003e rather than powerful: crunchy red berries, lively acidity, extremely fine tannins and a distinctly savory, peppery streak. The finish turns subtly bitter and herbal, with pepper and mineral salinity lingering behind the fruit. The 2024 vintage seems particularly suited to Pelaverga, producing wines of moderate alcohol, good freshness and clearly defined aromatics.\u003c\/p\u003e\u003cp\u003eThis is a wine to \u003cstrong\u003eserve slightly chilled, around 55–60°F\u003c\/strong\u003e. Think of it stylistically somewhere between \u003cstrong\u003eSchiava, Frappato and a very delicate cru Beaujolais\u003c\/strong\u003e, but with considerably more pepper and Piedmontese savoriness.
